Savory Pistachio Pairing
Pistachios, Please! Celebrating the Year of the Skinny Nut™
After holiday treats and over-indulgences I, like many, aim to eat healthier in the new year. Today I’m sharing a delicious way to get back on track in 2015. Nuts! Not just any nuts, but in-shell pistachios. Here’s why:
*Pistachios are known as the Skinny Nut™. They’re one of the lowest calorie, lowest fat nuts and they offer more nuts per serving compared to most other snack nuts.
*They are also among the highest in protein and have 3 grams of fiber per ounce.
*Empty pistachio shells serve as a “visual cue” as to how many pistachios you’ve eaten and help you be more mindful about snacking. Don’t discard the shells, keep them in a small bowl next to you while you munch!
Growing up, every New Year my dad would get a 5-pound bag of pistachios from a work client. After dinner we would all sit around the dinner table cracking nuts and talking about well, anything. We looked forward to the pistachios and those moments every year. Now every time I crack a pistachio open I can’t help but remember those January evenings with family and of course, pistachios. Food = memories, right?
Today I can’t eat anything without my kids wanting some. Because of this I recognize that I need to be a good example by showing them balanced eating and snacking. This brings me to my (and my kid’s) perfect Skinny Nut™ pairing.
My perfect Skinny Nut™ pairing:
1 serving in-shell pistachios + 6 dried apricots + 1 ounce aged Gouda + Mineral water with a drop of lemon essential oil
The dried apricots offer a little something sweet, the aged Gouda provides a lot of flavor (I like aged Gouda because a little goes a long way), and the pistachios bring the crunch! After all, what’s a fabulous snack without the crunch?!?
