  • A sweet yellow onion can be substituted if you can’t find a Maui onion.
  • Don’t like coconut? Please feel free to leave it out.

FREEZE: I do not recommend freezing leftover salsa. It will not defrost well, and the fruits will become mushy due to the excess moisture.

What Do I Use if I Can’t Find a Maui Onion?

If needed, you can substitute a yellow onion for the Maui onion. Both of these types of onions have a mild flavor. Many salsas use red onion. While it is sweet and has great bite, it takes away from the flavors of the tropical fruit. A mild onion adds a more subtle flavor to this salsa recipe.

Pineapple Mango Salsa is a refreshing fruit salsa that goes well with various. The bright pineapple and mango are tasty, along with the spicy ginger and sweet coconut.

Ingredients
 
 

  • 1 large Maui onion diced
  • 2 large garlic cloves minced
  • 1 large jalapeno white membrane removed and minced
  • 2 large mangoes diced
  • 3 cups fresh pineapple diced (about half of a large pineapple)
  • ¼ cup fresh cilantro minced
  • ½ cup shaved coconut
  • 1 lime zested and juiced
  • 1 Tablespoon ginger freshly grated
  • 1 Tablespoon honey

Instructions

  • Add all of the ingredients to a medium bowl.
  • Give the mixture a quick stir.
  • Cover and chill for at least 1 hour.
  • Serve and enjoy.
