I like to put more effort into breakfast when we have overnight guests than just cereal and milk. My go-to breakfast is this breakfast taco! Overnight guests love it because there’s usually a filling they enjoy, and I like it because it’s SUPER easy to cook!

I also like serving this breakfast taco when we have folks over for early morning college football games and just for my family in general. Breakfast tacos are satisfying and delicious, not to mention customizable. 

The options are endless, regardless of dietary restrictions, so it’s completely family-friendly. Just grab your favorite Mexican ingredients (like homemade refried beans) and breakfast foods!

How To Make A Breakfast Taco

Ever cooked scrambled eggs? Sausage? Then you’re on the right track to make these breakfast tacos.

  1. In a large skillet over medium heat, cook the sausage. Use the back of a wooden spoon to break the meat apart and crumble while it cooks. 
  2. Continue until cooked through and browned (about 6-8 minutes).
  3. Move sausage to a paper towel-lined plate to drain. Leave all but 2 tablespoons of the sausage grease in the skillet. 
  4. Add the eggs, water, salt, and pepper to a large bowl. Whisk until combined. 
  5. Add the egg mixture to the skillet and cook over medium heat, stirring frequently, until scrambled and cooked through.
  6. Put the sausage, scrambled eggs, cheese, refried beans, salsa, and diced avocado in the tortillas, and enjoy!

Breakfast Tacos Storage and Serving Tips:

SERVE: You’ll want to serve these tacos immediately. 

STORE: Store your ingredients unassembled in the fridge. Use an airtight container! How long they’ll remain fresh will depend on the ingredient, but most (including cooked eggs, sausage, avocado, and refried beans) will keep for 3-4 days.

FREEZE: Again, store your ingredients unassembled in freezer-safe containers. Most ingredients should stay fresh for six months or so.

REHEAT: Let your ingredients thaw in the fridge if frozen, then reheat them in a skillet or microwave.

Breakfast Taco Bar Variations and Substitutions

  • Veggie Breakfast Tacos: Replace pork sausage with sautéed veggies like bell peppers, onions, and mushrooms.
  • Chorizo Twist: Swap pork sausage for chorizo for a spicier flavor.

How do you find a ripe avocado?

I must include this because so many love avocado in their breakfast tacos! If you’re looking for a ripe avocado, simply hold it in the palm of your hand and gently squeeze it. Don’t use your fingers! A ripe avocado will “yield.” A hard avocado means it needs a few more days.
