Fritters are fried patties typically full of fruit or vegetables. These Air Fryer Zucchini Fritters are full of vegetables without the hassle of deep-frying. After assembling the Zucchini Fritters, put them in the Air Fryer and let it do the work for you. The results are excellent!

The fritters are crispy on the outside and tender on the inside. This low-carb option is delicious as a snack, appetizer, light lunch, or dinner, especially during the summer months when zucchini is in season.

How To Make Zucchini Fritters In An Air Fryer

  1. First, add the zucchini, carrot, onion, and garlic to a sieve and toss together with salt. 
  2. Allow the vegetables to sit for one hour to drain all of the liquid from the veggies. 
  3. Next, place the veggies on a tea towel and squeeze out the extra liquid. 
  4. Then, preheat the air fryer to 375 degrees F. 
  5. Using a medium bowl, combine the veggies, flour, pepper, egg, cheese, and parsley. 
  6. Form small patties, one at a time, with one tablespoon for the fritter dough. 
  7. Spray the air fryer basket with cooking spray and set the fritters in the basket. Spray the tops of the fritters with cooking spray as well. 
  8. Finally, cook the fritters for ten minutes and then turn them over, spray them with cooking spray, and cook for another three minutes. Serve immediately.

Recipe Variations

  • Instead of shredded cheddar cheese, you can use shredded Colby-Jack or a Mexican blend.
  • Instead of parsley, you can use chives.

Serving and Storage Tips

SERVE: Serve the fritters with sour cream, Greek yogurt, or your favorite dressing.

STORE: Store in an airtight container in the refrigerator for up to 5 days.

FREEZE: Once cooled, place the fritters on a tray and freeze until frozen-solid, about 1 hour. Then, transfer the fritters to a freezer-safe container or zipper-top bag. Freeze for 2-3 months.

THAW: Thaw at room-temperature for 3-4 hours or overnight in the refrigerator.

REHEAT: Preheat the air fryer to 350°F for 3-5 minutes. Reheat the fritters for 2-4 minutes or until heated through.

Why are my zucchini fritters soggy?

The culprit for soggy fritters is too much moisture. Getting as much of the liquid out of the zucchini, carrot, and onion is essential, so they will fry quickly and get crispy rather than mushy. Salting the vegetables will help draw out the water in the vegetables.

Absolutely! They are full of fresh veggies and so delicious. It is a great way to get more vegetables into your family’s diet. Because these Zucchini Fritters are made in the Air Fryer, they are healthier than deep-frying them. They are a low-carb, keto-friendly option.

How many zucchini do you need for 2 cups shredded?

On average, one medium zucchini gives you about ⅔ cup when shredded. Therefore, you will need approximately three zucchinis to get two cups of shredded zucchini. My recipe calls for three cups of shredded zucchini, so I recommend getting at least four zucchinis to grate. However, depending on the zucchini size, this estimation may vary slightly.

Ingredients
 
 

  • 3 cups grated zucchini approximately 1 ½ pound
  • 1 carrot shredded
  • ½ medium white onion shredded
  • 1 teaspoon minced garlic
  • 2 teaspoons salt
  • 6 Tablespoons all-purpose flour
  • ½ teaspoon black pepper
  • 1 egg
  • ½ cup shredded cheddar cheese shredded
  • 1 teaspoon parsley chopped, optional

Instructions

PREP VEGGIES:

  • Combine zucchini, carrot, onion, and garlic in a sieve or small holed colander.
  • Add salt and stir.
  • Let veggies sit for 1 hour to drain all the liquid from the vegetables.
  • Place the vegetables in a clean tea towel and squeeze out the excess liquid.

PREP AIR FRYER:

  • Preheat the air fryer to 375°F for 3-5 minutes.

FORM FRITTERS:

  • In a medium bowl combine the vegetables, flour, pepper, egg, cheese, and parsley.
  • Use a tablespoon of the fritter dough and form small patties.
  • Spray the air fryer basket with cooking spray.
  • Place the fritters in the basket, making sure not to overcrowd the basket. You may need to air fry in batches.

COOK FRITTERS:

  • Spray the tops of the fritters with cooking spray and place the basket in the air fryer.
  • Cook at 375°F for 10 minutes. Turn the fritters over, spray with cooking spray and cook for an additional 3 minutes.
  • Serve.

Notes

  • It is very important to get as much of the liquid out of the zucchini, carrot, and onion so they will fry quickly and get crispy rather than mushy.
  • Salting the vegetables will help draw out the water in the vegetables.
  • Serve the fritters with sour cream, Greek yogurt, or your favorite dressing.
