Hi! You can absolutely make this a day ahead of time. Keep it tightly covered with plastic wrap or store it in an airtight container. Adding the apple cider vinegar and a portion of the dressing to the warm pasta allows the noodles to absorb what they need right away. This step prevents the noodles from soaking up the rest of the dressing later. Your macaroni salad will not dry out in the refrigerator. Enjoy!]]></description>
