If your filling is too loose and squishes out, it might be due to overmixing or not enough chilling time. Ensure that you beat the filling ingredients just until smooth, avoiding overbeating, which can cause the filling to become runny. Also, consider chilling the assembled cake longer before serving, as this can help firm up the filling.

The center might not have baked properly due to uneven oven temperature or too much batter in one pan. Baking in two pans can help ensure even baking. Also, make sure to test with a toothpick in several spots to confirm doneness. Adjusting your oven temperature slightly lower and extending the baking time might help as well.

I made the cake just like the recipe said. It didn't get done in the middle.
It still juggled. I baked another 10 minutes. It only juggled a little but sprang back. Didn't show anything on a toothpick. Still wasn't done.
What did I do wrong? Can I bake it in two pans?

Hi Lori,

I found the mascarpone at Walmart in the aisle where the "specialty cheese is" near the deli in my local Walmart store, and it's where you find those already premade pizzas that you just bake at home amongst a few other items in that area. In the middle of that department are also premade sub sandwiches it's near that area if yours is set up similarly, if not ask and I'm sure they can direct you to the "specialty cheeses" area. I hope you are able to find that at your local Walmart store.

The crumb does not need to be baked but the flour needs to be heated. ½ cup + 1 Tablespoon all-purpose flour heated in 350 degree oven for 5 minutes

This is one of the best cakes I have ever made! The texture and flavor were so wonderful! I used cream cheese and I also added the zest of one lemon to the cake batter. This is now on my short list of go-to cakes for special occasions. (We used to love the one at Olive Garden, but I agree, this one is even better!)
