Lime, Chipotle & Parmesan Popcorn
I love popcorn, I really do. My dad used to make it for my siblings and I as a treat every single Friday night. He would air-pop it, drizzle it with butter, and then we’d settle into our favorite TGIF shows (you remember the ones; Full House, Family Matters, Step by Step, etc). Today I like to do the same thing with my kiddos, but I try to make our popcorn with better ingredients that are better for you.
Life is a bit hectic and time gets away from me, especially the time between after dinner and my kiddo’s bedtime. Just like growing up, my little family likes to make Friday nights Family TV/Movie night. We still want to get the kids in bed on time, so after we clear the dinner table we jump right into our Family TV/Movie Night. I usually pop a bag of popcorn and call it done. On a recent trip to Walmart I found Skinnygirl popcorn in their Lime & Salt flavor. I love all things lime and decided to try it for our next movie night. I was expecting a fake, or even subtle lime flavor, but I found neither in this popcorn. The lime flavor was perfect, and everyone loved it.
The next day I wanted popcorn again for a snack, but this time I wanted to try it with one of my favorite lime-flavored combinations: Lime, Chipotle & Parmesan. Wow, if you like spicy snacks, you definitely need to try this recipe!
Cook’s Note for Lime, Chipotle & Parmesan Popcorn:
*Make sure you grate the Parmesan and not shred it. You will use more cheese if you shred it, and then it’s no longer a healthy snack. Grating the cheese lets you evenly distribute the cheese by using less of it.
*Chipotle powder is spicy. If you’re not a spice fan I suggest using paprika instead.
- 1 bag Lime & Salt Skinnygirl popcorn
- 2 Tablespoons grated Parmesan cheese
- 1/8 teaspoon chipotle powder
- Cook the popcorn as per the package instructions.
- While the popcorn is popping, grate the cheese into a small bowl. Add the chipotle powder and give it a quick toss until the cheese is coated in the chipotle powder.
- Pour the popcorn into a medium bowl, sprinkle the Parmesan mixture over it, and toss until coated. Serve immediately.
