I grew up in New England, arguably the capital of Fall, with all its glorious foliage! I no longer live there, but often long for those beautiful Fall days. The other thing I love about the Fall season is the Fall flavors!

The recipe I am sharing today is a unique Fall recipe that will please all the pumpkin lovers in your life and help you with your busy mornings. Surprise your kids with a popsicle for breakfast; they will hardly believe what you are giving them! 

These pumpkin pie pops are so creamy and taste just like pumpkin pie! Plus, they’re dairy-free, thanks to Silk’s dairy-free vanilla yogurt! My popsicles have it all: warm Fall flavors, easy to make, and a healthy breakfast on the go.

How To Make Pumpkin Popsicles:

  1. Gather all of the ingredients.
  2. Add everything but the granola to a bowl.
  3. Mix everything together.
  4. Fill the molds halfway full.
  5. Add the granolal.
  6. Fill the molds to the top with the Silk yogurt mixture.
  7. Put in popsicle sticks. Since this is a thick popsicle mix, they should stand upright, more or less.
  8. Freeze for at least 6 hours before serving.

Recipe Variations:

  • Instead of dairy-free yogurt, use the yogurt of your choice. 
  • For added crunch and protein, add two tablespoons of toasted and chopped pecans to the granola before adding it to the popsicles. 
  • Instead of honey, you can use agave or maple syrup. 

Yogurt Popsicles Storage Tips:

SERVE: Once you fill the molds, you have to let these freeze before serving. 

STORE/FREEZE: Once the popsicles are out of the molds, place them in a freezer-safe bag and return them to the freezer. They should stay tasty for 3-6 months!

What’s the easiest way to get the popsicles out of the molds?

Run them under warm water for about 30 seconds after freezing. Then these pumpkin popsicles will wiggle right out!

How many popsicles will this make?

This recipe should prep enough filling for a mold with ten popsicle slots.

How long does it take to make these pumpkin pie pops?

Since you have to freeze them (they’re popsicles, after all!), this will take around 6 hours, depending on how long the pops need to solidify. But that’s all hands off, thankfully. The prep time you’ll need to set aside is only 10 minutes.

Is pumpkin pie filling the same as pumpkin puree?

Don’t use filling! Use the puree. They’re two different things, and using pumpkin pie filling may not freeze right (or taste right).

Is the Kashi cereal necessary?

It isn’t, but it makes these all the more filling and delicious at breakfast. You can, of course, replace the Kashi cereal with your favorite granola or anything else!

Can you use regular yogurt?

Absolutely. It won’t change the popsicles’ flavor if you prefer regular dairy yogurt. I just like using dairy-free for lactose-intolerant people in my house! Who wants a stomach ache in the morning?

Is it possible to make your own pumpkin pie spice?

Yes! If you don’t have any, or it’s just not available where you are, you can easily make it with ground cinnamon, nutmeg, ginger, allspice, and cloves. You can find my favorite recipe right here on the website!

Equipment

  • Measuring cups
  • Measuring spoons
  • mixing bowl

  • popsicle molds
  • Popsicle sticks

Ingredients
 
 

  • 24 ounces Silk dairy-free vanilla Yogurt
  • 3 Tablespoons honey
  • 1 ½ teaspoons pumpkin pie spice
  • 1 cup pumpkin puree
  • ½ cup Granola OR Kashi GOLEAN Crisp Cinnamon Crumble

Instructions

  • In a medium bowl add the Silk yogurt, honey, pumpkin pie spice, and pumpkin puree.
  • Stir until combined.
  • Fill the popsicle molds half-way with the mixture (I used 2 scoops from my 1 ½ Tablespoon scoop).
  • Add some Kashi cereal and press it lightly into the molds.
  • Then fill the molds to the top with another 1 ½ tablespoon scoop of the yogurt mixture.
  • Insert a popsicle stick into each mold, cover and freeze at least 6 hours before serving.

  13. This is the first I’ve seen of the Silk yogurt, not available in my area, so if I use regular yogurt would I need to add any sweetener? Love your pop molds too 🙂 I definitely want to try this recipe, love the idea of a popsicle for breakfast!
