Preheat oven to 350 degrees F. In a medium bowl, whisk together the dry ingredients.

Beat the butter and sugars on medium speed until light and fluffy. Add the eggs & vanilla and mix on medium speed until combined.

Dump in the dry ingredients and mix on low speed. Fold in the carrots and shredded coconut.
