In a large, heavy-bottomed pot over medium heat, add the Italian sausage. Break the meat apart into chunks. Cook until browned, about 5-6 minutes.
Increase the heat to medium-high, add the onion and cook until translucent and starting to brown on the edges, about 4 minutes.
