First, put the tomatoes, cucumber, onion, red pepper, garlic, olive oil, and vinegar in a glass bowl or blender.

Blend, process, or use an immersion blender and blend or process until smooth. Add the potato flakes, oregano, and spices. Blend for 30-60 seconds more.

Place in a large bowl to chill in the fridge for sixty minutes. Finally, serve and enjoy.

Instead of white wine vinegar, you can use sherry wine vinegar.

The flavor is even better the next day! Serve with croutons, bread pieces, and additional chopped veggies.
