Dissolve sugar in egg whites over a saucepan with simmering water. Once sugar is dissolved, whisk the mixture until stiff peaks form.

Sift the almond flour and powdered sugar mixture into the bowl with egg whites. Add half of it first.

Fold the dry ingredients into the egg whites until no lumps remain. Then add the other half of the dry ingredient mixture.

Continue folding for another one to two minutes until the meringue reaches the lava stage.

Transfer the meringue to a piping bag and pipe 1” circles and pipe them about 1.5” apart on parchment paper.
