Strawberries & Cream Blintzes

These Strawberries & Cream Cheese Blintzes are crepes stuffed with a strawberry cream cheese filling.

They're pan fried and dusted with powdered sugar.

Ingredients

– Milk – Cold Water – Eggs – All-purpose Flour – Granulated Sugar – Salt – Melted Butter – Cream Cheese – Ricotta Cheese – Powdered Sugar

NOTE: When flipping the crepe, make sure you use a rubber spatula, not metal, as it can tear the delicate crepe easily.

First, make your crepe batter and cook until you have enough for a batch.

Next, combine your ingredients for the cream cheese filling. Once done, start to assemble the blintzes.

Roll the crepe to make a little burrito with the seam facing down.

Brush the blintzes with butter. Cook the Blintzes in the skillet for 2 minutes per side, or until golden and crisp.

Pop the pan into the preheated oven and bake for 10 minutes, giving the filling time to cook and set up.
