Place a medium pot over medium-high heat and stir together the milk, sugar, and 1 cup of the heavy cream.

Scrape the vanilla beans and add them into the pot. Toss the pods in too.

Heat the mixture while stirring often until the mixture reaches 110  degrees. Once done, let it cool.

Remove the vanilla bean, and add the egg yolks to the pot.

Pour the custard mixture through the sieve. Then mix in the remaining cup of heavy cream and vanilla extract.
