This Hominy Casserole is a versatile side dish that can be served with Mexican dishes and other savory dishes. It’s buttery, cheesy, and has a hint of spice, perfect for any gathering!
Drain and rinse the hominy, then add it to a large cooking pan.
Add 2 cups of water, garlic, cumin, paprika, Rotel, and butter to the pan.
Simmer on a medium-low temperature for a minimum of 30 minutes, adding more liquid as needed. It is even better to let it simmer for an hour if possible.
Remove the pan from the heat and stir in the sour cream.
PREP OVEN AND COOKING VESSEL:
Preheat the oven to 400°.
If the pan is oven safe, you can leave it in the pan, otherwise, pour it into a casserole dish or any oven-safe pan.
Sprinkle the cheese over the hominy and place it in the oven.
BAKE:
Bake until the cheese is melted and bubbly, about 10 minutes.

You can make this in the slow cooker by putting it on high for 2 hours and making sure it has some liquid, only letting it cook out some the last 30 minutes of cooking. Then stir in the sour cream and top with the cheese.
