PREP SMOKER:
Preheat the smoker to 275°F.
PREP APPLES:
Core your apples but don’t go to the bottom; remove about ¾ of the depth of the apple.
Use a paring knife and widen the well you’ve made by removing the core. Widen it to about 1½ - 2 inches.
MAKE FILLING:
Add butter and brown sugar to a medium-sized bowl and combine.
Mix the cranberries, chopped walnuts, ground cinnamon, and nutmeg into the butter until blended well.
FILL APPLES:
Divide the filling evenly and fill the centers of the apples.
SMOKE APPLES:
Place the apples onto the smoker. You can arrange them using grill rings to help keep them upright or place them in a cast iron skillet.
Smoke until the sides of the apples are soft, 1 to 1 ½ hours, depending on the size of the apples.
SERVE:
Remove the apples from the smoker and serve with vanilla ice cream and caramel sauce (both optional).
