Smoked Filet Mignon (Reverse Sear Method)
You’ll use the reverse sear method in this recipe to make an out-of-this-world smoked filet mignon on your Traeger grill (or any other smoker)! It’s an easy recipe for a particularly delicious carnivore dinner.

Filet Mignon
Coarse Sea Salt
Cracked Black Pepper

Instructions
PREP FILETS:
Liberally season all sides of the Filet Mignon with salt and pepper.
Allow to rest on the kitchen counter as you preheat the smoker to 250°F.
SMOKE FILETS:
Place meat directly onto grates and smoke until the internal temperature is 10°F from the desired doneness temperature. (See the chart in the notes.)
SEAR FILETS:
Place a cast iron skillet onto a 550°F grill or on a stove set to high and let it reach temperature.
Add butter to the skillet and let it get bubbly. Add fresh Rosemary.
Transfer the Filet Mignon to the preheated skillet and sear for 2-3 minutes per side.
REST AND SERVE:
Rest the filets for 10 minutes before serving.

Desired Doneness
● Rare = 120°F
● Medium-Rare = 130°F
● Medium = 140°F
● Medium-Well = 150°F
● Well Done = 160°F
