Ingredients
SHRIMP:
2
pounds
shrimp
deveined, shells removed and tails left on
1
Tablespoon
salt
8
black peppercorns
2
bay leaves
2
lemons
juiced, divided
Ice
COCKTAIL SAUCE:
2
cups
ketchup
1
tablespoon
fresh lemon juice
2
teaspoons
Worcestershire sauce

horseradish

Instructions
PREP SHRIMP:
Clean shrimp, devein and remove the shells. Set aside.
PREP BOILING WATER:
In a large pot, add cold water, salt, peppercorns, bay leaves, and the juice of 1 lemon.
Bring the mixture to a boil and cook for 5 minutes.
COOK SHRIMP:
Remove the pot of boiling water from the heat and add in the shrimp.
Let the shrimp sit in the pot and cook for 2-3 minutes, or until the shrimp becomes opaque and the tails begin to curl.
MAKE ICE BATH:
Meanwhile, in a large bowl, add cold water and ice.
COOL SHRIMP:
Use a slotted spoon to transfer the shrimp to the ice bath.
Let the shrimp sit for 5 minutes.
Drain the shrimp and place on a serving platter.
Squeeze the second lemon over the shrimp.
Chill the shrimp while you make the cocktail sauce.
MAKE COCKTAIL SAUCE:
Whisk together ketchup, lemon juice, and Worcestershire sauce in a medium bowl.
Whisk in 1 teaspoon horseradish at a time until your desired taste.
SERVE:
Serve with shrimp immediately with cocktail sauce or store in the refrigerator until ready to serve.

You can make this recipe 1 day ahead of time. Store the shrimp and cocktail sauce in the refrigerator.
