Ingredients
COATINGS:

Panko breadcrumb
½
cup
grated Parmesan
1
teaspoon
garlic powder
2
large eggs
FOR THE EGGPLANT:
1
eggplant
sliced into ½ sticks
Olive oil cooking spray
FOR SERVING:

marinara sauce

Instructions
PREP COATINGS:
Mix together Panko breadcrumb, Parmesan, and garlic powder in a bowl.
In a second bowl, whisk together the eggs.
SPRAY AIR FRYER:
Spray the bottom of the air fryer's basket with olive oil cooking spray.
COAT EGGPLANT:
Take one stick at a time and dip it in the eggs.
Transfer the stick to the panko mixture bowl and press the stick on all sides, so it’s covered with the Panko mixture.
Add the coated eggplant to the air fryer basket.
Repeat with the remaining eggplant sticks.
Lightly spray the tops of the eggplant with olive oil cooking spray.
COOK:
Cook at 400˚F for 8 minutes in the air fryer, flipping them halfway through cooking.
SERVE:
Serve hot with marinara sauce.
Notes
Depending on the size of your air fryer, you may need to cook the fries in batches.
