Ingredients

grated zucchini
approximately 1 ½ pound

medium white onion

minced garlic

Instructions
PREP VEGGIES:
Combine zucchini, carrot, onion, and garlic in a sieve or small holed colander.
Add salt and stir.
Let veggies sit for 1 hour to drain all the liquid from the vegetables.
Place the vegetables in a clean tea towel and squeeze out the excess liquid.
PREP AIR FRYER:
Preheat the air fryer to 375°F for 3-5 minutes.
FORM FRITTERS:
In a medium bowl combine the vegetables, flour, pepper, egg, cheese, and parsley.
Use a tablespoon of the fritter dough and form small patties.
Spray the air fryer basket with cooking spray.
Place the fritters in the basket, making sure not to overcrowd the basket. You may need to air fry in batches.
COOK FRITTERS:
Spray the tops of the fritters with cooking spray and place the basket in the air fryer.
Cook at 375°F for 10 minutes. Turn the fritters over, spray with cooking spray and cook for an additional 3 minutes.
Serve.
Notes
It is very important to get as much of the liquid out of the zucchini, carrot, and onion so they will fry quickly and get crispy rather than mushy.
Salting the vegetables will help draw out the water in the vegetables.
Serve the fritters with sour cream, Greek yogurt, or your favorite dressing.
