America’s Test Kitchen Banana Bread

This might be the best banana bread recipe I’ve tried to date.

The consistency is perfect and not too dense like some banana breads tend to be.


– Unbleached all-purpose flour – Sugar – Baking soda – Table salt – Very ripe bananas – Plain yogurt – Large eggs

YIELD: 1 loaf

I attribute the great texture of this bread to the yogurt in the recipe.

Adjust a rack to the lower-middle position of the oven and preheat it to 350 degrees.


In a large bowl, whisk together the flour, sugar, baking soda, and salt.


In a medium bowl, stir together the bananas, yogurt, eggs, melted butter, and vanilla, blending well.


Gently fold the wet ingredients into the dry, just to blend–do not over mix. Add in the chocolate chips (optional).
