This Divinity Candy recipe is a classic holiday favorite! You only need a handful of ingredients, a little time, and you have soft and chewy Divinity Candy.
Add a candy thermometer to a medium heavy saucepan. Heat sugar, corn syrup, and water over medium heat until it reaches the hard ball stage, 250-260 degrees F.
BEAT EGG WHITES:
While the syrup is cooking, beat egg whites in a stand mixer fitted with a whisk attachment or a handheld mixer until stiff peaks form.
ADD SUGAR:
When the sugar reaches temperature, remove it from the heat and slowly pour it into the egg white while the mixer runs on low speed. Then, increase the speed to high and beat for 1 minute.
BEAT:
Once the sugar syrup is in, add vanilla and beat on high until the candy holds its shape, about 10-15 minutes. ** see notes below
SCOOP:
Spray a cookie dough scoop or 2 spoons with cooking spray. Drop scoops of candy onto prepared baking sheets.
FINISH:
Immediately add a whole pecan.
Allow divinity to dry and harden for several hours or overnight.
Notes
**The time it takes to beat the mixture until it holds its shape will depend on your mixer. I found it best to beat on high speed for 5 minutes and then let the mixture and mixer rest for 2-3 minutes. Then repeat several times.
Store in an airtight container at room temperature for up to two weeks.
