Creamy Tuscan Tortellini Bake

Today I’m sharing my newest casserole creation with you, my Creamy Tuscan Tortellini Bake.

I used mild Italian sausage, but feel free to use hot if they’re more to your taste.

Ingredients

– Ground Italian sausage – Potatoes  – Tortellini  – Kale – Butter – All-purpose flour

NOTE: I used 2% milk in this recipe. I do not suggest using skim milk.

In a large skillet over medium heat cook the Italian sausage. Break up the meat with the back of a wooden spoon.

Cook for about 8 minutes or until fully cooked. Drain on paper towels; set aside.

Cut the potatoes in half length-wise, then cut in half again to make quarters. Slice the potato wedges 1/8 of an inch thick.

In a medium saucepan over medium heat melt the butter. Add the flour and whisk constantly.

Continue cooking and whisking for 2 minutes to thicken. Slowly whisk in the milk.
