This Sherry, Ham and Cheese Brunch Bake is an easy main dish for brunch. It’s layered with so much flavor and you can make it ahead of time, too.
Can you believe that Easter is almost here? It seems like just yesterday we were cleaning up from Christmas. But here we are! I look forward to this time of year with the egg hunts, picnics, bright Easter dresses, time spent with family and friends on Easter Sunday, and BRUNCH! Brunch is literally my favorite meal and I love making savory creations like this Sherry, Ham and Cheese Brunch Bake.
Caramelized shallots are my jam! I love adding them to my recipes because with one simple addition I can add so much flavor to any dish. This is especially true when they’re simmered with Holland House Sherry Cooking Wine. What I love about cooking with Holland House is that they fill life with flavor and make each dish memorable. Take this Sherry, Ham and Cheese Brunch Bake, for instance. By simmering the shallots in the cooking wine, an ordinary dish transforms into something extraordinary!
Holland House Cooking Wines are my go-to countertop ingredient that I add to my recipes. They literally enhance the flavor of every single savory dish. Sometimes brunch casseroles lack flavor or are one-note, but not this Sherry, Ham and Cheese Brunch Bake! In this recipe, I simmer 1/2 cup of the cooking wine with my shallots. The shallots become little jewels that are packed with so much taste! The addition of the caramelized shallots makes this brunch casserole simply irresistible!
I used Holland House Sherry in this recipe. It has a sweet aroma and a light golden color. With a mild sherry wine flavor and a hint of caramel and nut, this sherry is fantastic for adding depth and layers of flavor to any dish!
Sherry, Ham and Cheese Brunch Bake Make-Ahead Directions:
- Making this brunch casserole ahead of time is a breeze. Just note that if you follow this method, the potatoes won’t be as crisp, they will be more creamy.
- Follow the recipe instructions through step 7 below.
- Then, cover the casserole tightly with foil or plastic wrap and refrigerate overnight.
- A little over 1 hour before you want to serve the brunch bake, preheat the oven to 325 degrees.
- Bake for 50-55 minutes, or until the edges of the casserole are golden brown and the center of casserole doesn’t jiggle when you shake it.
Ham and Cheese alternative add-ins:
If you don’t have ham, cheddar cheese, or Parmesan on hand then you can use any of the following in their place.
- Meats (no more than 1/2 pound of any of these): chopped bacon, crispy chopped pancetta, or cooked and crumbled breakfast sausage.
- Cheese (no more than a total of 3 cups of shredded cheese): Swiss, gruyere, gouda, or Monterey Jack.
- Vegetables (no more than 1 cup of any of these):sautéed mushrooms, sautéed bell peppers, artichokes, kale, sautéed leeks, or spinach.
- Fresh Herbs (no more than 2 Tablespoons total of any of these): parsley, basil, chives, green onion, thyme, (I’d say no more than 1 Tablespoon of fresh thyme).
How to Make Ham and Cheese Brunch Bake:
- Gather all the ingredients.
- Sauté the shallots and simmer in Holland House Sherry Cooking Wine.
- Add the hash brown potatoes to a baking pan and toss them with the shallots, butter, and salt and pepper.
- Bake until they are cooked and the edges begin to brown.
- Whisk together the eggs, milk, dill, and mustard powder.
- Sprinkle the shredded cheese over the cooked potatoes followed by the ham.
- Pour the egg mixture evenly over the ham, cheese, and potatoes.
- Bake until golden brown on the edges and the center of the casserole doesn’t jiggle anymore.

Sherry, Ham and Cheese Brunch Bake
- 2 teaspoons olive oil
- 2 large shallots minced
- ½ cup Holland House Sherry Cooking Wine
- 20 oz package frozen hash brown potatoes
- 8 Tablespoons salted butter melted
- ½ teaspoon salt
- ½ teaspoon pepper
- 8 large eggs
- 1 ¼ cups whole milk
- 8 ounces precooked ham cut into 1/2-inch pieces
- ½ teaspoon dry mustard powder
- 2 Tablespoons fresh chopped dill
- 2 cups shredded white cheddar cheese (8 ounces)
- 1 cup shredded Parmesan cheese 4 ounces
- freshly grated Parmesan cheese optional
- fresh chopped dill optional
- Move oven rack to middle position and preheat to 400 degrees F. Generously grease a 9x13-inch baking dish (or another oblong 3-quart baking dish) with butter, and set aside.
- In a 10-inch non-stick skillet, add the olive oil and preheat the pan over medium heat. Add shallots, and cook, stirring often, until softened and golden, about 7-8 minutes.
- Stir in Holland House Sherry Cooking Wine and cook until all the liquid is evaporated, about 3-5 minutes. Remove from heat.
- Add the frozen hash browns to the prepared pan. Pour the melted butter over the potatoes, and add the salt, pepper, and caramelized shallots.
- Use a spoon to give everything a good mix. Bake for 30 minutes, or until the potatoes are cooked through and some of the edges are beginning to brown. Remove the potatoes from the oven and reduce the temperature to 325 degrees F.
- Sprinkle the cheese evenly over the potatoes followed by the ham.
- In a large measuring cup or small bowl whisk together the eggs, milk, mustard powder, and dill. Vigorously whisk until fully combined and the eggs start to become frothy, about 1 minute.
- Pour the egg mixture evenly over the potatoes, cheese, and ham.
- Bake at 325 degrees for 35-40 minutes, or until the edges of the casserole are golden brown and the center of casserole doesn’t jiggle when you shake it.
- Cool for 5 minutes before slicing and serving. Serve with additional grated Parmesan cheese and chopped dill (both optional).
