Simple Roasted Butternut Squash Cubes

Roasted Butternut Squash is one of those simple pleasures that I look forward to every Fall and Winter.

Roasting butternut squash caramelizes the sugars in the squash and deepens its flavor.

Ingredients

– Butternut squash – Extra virgin olive oil  – Salt – Black pepper – Fresh herbs (optional) – Honey or maple syrup (optional)

NOTE: Depending on the size of the squash that you use, you will have 2-3 cups of roasted butternut squash pieces.

First, cut off the ends of the squash and peel the entire squash with a strong vegetable peeler.

Next, slice the squash in half lengthwise and cut into 1-inch slices.

Spread the squash slices out onto a baking sheet covered in foil.

Toss the slices in 3 tablespoons of olive oil and  salt and pepper.

Finally, arrange the squash into an even layer and bake for 30 mins in a 400F oven, turning the squash once after 15 minutes of roasting.
