Smoked baked potatoes may just change your entire outlook on baked potatoes in general. I always liked a good baked potato, but never thought they were anything special. Now, my family and I don’t know if we can have baked potatoes any other way, and they’ve quickly become a favorite side dish, especially when we have company over.

It’s incredibly easy and generally hands-off to make smoked baked potatoes, so get your grill ready and follow along. You’ll have a delicious, mind-blowing side in no time!

Here’s everything you need to make this recipe.

How To Smoke Baked Potatoes

Choose your favorite wood pellets for this recipe—hickory, mesquite, or even applewood all work well. Don’t hesitate to try something new for a unique flavor twist!

Prep the Potatoes

  • Wash and thoroughly dry the potatoes. Drizzle them with olive oil, then rub it evenly over the skin.
  • Sprinkle each potato generously with salt and pepper to create that perfect seasoning crust.

  • Place the prepared potatoes directly on the smoker grates of a 225°F preheated smoker.
  • Close the lid and let them cook for 2 to 3 hours, checking occasionally. The potatoes are done when tender and easily pierced with a fork.

Storage Tips

SERVE: Serve them with ribeye, brisket, tri-tip, beef tenderloin, or ribs!

STORE: Just like regular baked potatoes, smoked baked potatoes can be kept in the fridge for 3-5 days. Once they’ve cooled, store them in an airtight container.

FREEZE: Believe it or not, you can freeze any leftover baked potatoes! Again, let them cool down (sans toppings), then wrap them in foil before placing them in a freezer-safe bag or container. They’ll stay fresh for 3 months.

REHEAT: If your potatoes were frozen, let them thaw in the fridge overnight. Then, a quick trip in the oven or microwave should bring them back to life.

What type of potatoes work best for smoking?

I use russet potatoes because of their large size and fluffy interior texture.

Are russet potatoes necessary in particular?

They’re the best for this recipe, but I’ve found Yukon gold is a decent variety, too. You want something very starchy with thick enough skin to make the perfect baked potato. (Of course, you can also use sweet potatoes, too!)

How long does it take to smoke potatoes?

Between 2-3 hours. It will depend on your grill, the size of your potatoes, and how you like your baked potatoes done. (I would aim for an internal temperature of 205°F using a meat thermometer, but this isn’t as strict as it is with something like steak.) The prep time for this recipe is under 5 minutes, so in general, it’s very hands-off!

How do I know when the potatoes are done?

You will know the potatoes are done when they are fork-tender. This means you can easily poke a fork into the potato. If the fork does not go in easily, the potatoes need to cook a little longer.

How can I ensure my potatoes all cook evenly?

Make certain you’re only using potatoes of about the same size, or you may have to cook in batches, which is a little time-consuming!

What toppings go well with smoked baked potatoes?

Here is a list of my favorite toppings: Butter, sour cream, chives, bacon, and shredded cheese. Some other classics include cottage cheese, chili, and pulled pork.

FOR THE POTATOES:

  • 6 large Russet potatoes try to make them uniform in size
  • 3 Tablespoons olive oil instead you can use avocado oil, melted butter, or even bacon grease
  • 2 teaspoons Kosher salt you can use sea salt, garlic salt, or Himalayan pink salt instead
  • 1 teaspoon cracked black pepper you can use ground white pepper for a milder, slightly sweeter flavor

Instructions

PREP SMOKER:

  • Preheat your smoker to 225°F. Any wood pellets work well with baked potatoes. Use this as an opportunity to experiment to see which is your favorite.
