How To Cook Pork Loin In The Crockpot

  1. Make the Rub: Mix the paprika, salt, and black pepper in a small bowl.
  2. Rub the Pork: Rub the pork loin with the seasoning mixture.
    The seasoning rub mixed together and then rubbed all over the pork loin.
  3. Brown the Pork: Heat olive oil in a skillet and brown the pork on all sides for 2-3 minutes each.
  4. Prepare the Crockpot: Add chopped onion, garlic, and chicken broth to the crockpot.

  5. Slow Cook: Place the browned pork loin in the crockpot. 
  6. Cover and cook on low for 3-4 hours or until the internal temperature reaches 145°F.
  7. Serve: Let the pork rest for 5 minutes before slicing and serving.

Recipe Variations

You can technically skip this step. However, I do not recommend it, as browning the pork first adds a depth of flavor and better overall texture to the pork that you will not get by only cooking the pork loin in the crockpot.

Can I cook this on high instead of low?

I do not recommend cooking this on high, as the low and slow method is what helps to make the pork so juicy and tender.

How do I know when the pork is done?

Use a meat thermometer to check the pork for doneness. The internal temperature should reach 145°F.

Can I add vegetables to the crockpot?

Yes, add potatoes, carrots, and celery for a complete one-pot meal. Just cut the vegetables into large chunks to prevent overcooking.

  • 3 garlic cloves smashed but left whole
  • 1 cup chicken broth or stock
