How To Smoke Apple Crisp

***For complete recipe instructions, see the recipe card below. I used a wood pellet grill for most of this process. This recipe assumes you have a Traeger smoker/grill. Use your favorite pellet type for this recipe.

  1. Peel and slice the apples. Add them to a large bowl with lemon juice. (Make sure the apples are evenly sliced so they cook evenly.)
  2. Whisk together all of the topping ingredients except the butter.

  3. Add the softened butter and mix until well combined.
  4. Add granulated sugar and cinnamon to the bowl of apples and toss to coat.

  5. Evenly add the apple mixture to a 9-inch cast iron skillet.
  6. Add topping until the apples are completely covered.

  7. Place the crisp in your smoker preheated to 350°F, checking the crisp every 20 minutes and moving the skillet as needed to cook it evenly. Cook until the apples are tender and the crisp topping is browned (about 45-60 minutes).
  8. Remove from your smoker and let it rest for 20 minutes. Serve warm with your favorite ice cream and toppings!

Use your favorites! I like Granny Smith and Honeycrisp for smoked apple crisp. Pink ladies, Braeburn, and Golden Delicious apples are also very good for this recipe. You really can’t go wrong! Some might say to avoid softer apples, but they work fine in apple crisp like this. 

Is there a way to make the topping quicker?

You can use a food processor if need be.

How do I know when the crisp is done?

It’s ready when the apples are tender, the topping is golden brown, and the filling is bubbling around the edges. This usually takes 45-60 minutes.

Ingredients
 
 

Apples:

  • 6 cups apples your favorite, we used Granny Smith and Honeycrisp, peeled, cored and sliced
  • 2 Tablespoons lemon juice
  • ¼ cup granulated sugar
  • 2 teaspoons ground cinnamon

Topping:

  • ¾ cup light brown sugar packed
  • ½ cup all-purpose flour
  • ½ cup quick cooking oats
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ cup 1 stick unsalted butter, softened

For Serving (all optional):

  • Vanilla ice cream
  • Caramel sauce
  • Pecans

Instructions

Prep Smoker and Apples:

  • Preheat smoker to 350°F
  • While the smoker heats, peel and slice the apples and add them to a large bowl with lemon juice. Set aside

Make the Topping:

  • Whisk together all ingredients except the butter
  • Add the softened butter and mix until well combined. You can also add all ingredients to the food processor to speed up the process.

Make Apple Mixture:

  • Add granulated sugar and cinnamon to the bowl of apples and toss to coat
  • Evenly add apple mixture to 9 inch cast iron skillet
  • Add topping until the apples are completely covered

Smoke Crisp:

  • Place the crisp on the smoker, check every 20 minutes moving the skillet as needed to get even cooking. Cook until apples are tender and crisp topping is browned and mixture is nice and bubbly. 45-60 minutes.
  • Remove from your smoker and let it rest for 20 minutes. Serve warm with your favorite ice cream and toppings.
