    Substitutes

    • Mini Marshmallows: you can use regular-sized marshmallows but cut them into fours. Just make sure the marshmallows are fresh!
    • Salted Butter: You can also use unsalted butter. Just add ⅛ teaspoons of salt.
    • Marshmallow Creme: You can use Marshmallow Fluff instead.
    • Vanilla Extract: You can use imitation vanilla or vanilla bean paste instead of vanilla extract.
    • Rice Krispies Cereal: This recipe hasn’t substitutions for Rice Krispies cereal.

    How To Make Rice Krispie Treats With Marshmallow Creme

    Here’s a quick guide to making perfect marshmallow creme Rice Krispie treats. For complete instructions see the recipe card below.

    Cook:

    In a large pot, melt butter over low heat. Then, add the marshmallows and constantly stir until they melt.

    Remove the pot from heat and stir in the marshmallow fluff and vanilla.

    Then, stir in Rice Krispies until the cereal is evenly coated.

    Set:

    Pour the mixture into a 13×9-inch baking pan lined with foil hanging over the pan’s edges. Then, spray the foil with nonstick cooking spray. Use wax paper to press the mixture gently into the pan.

    Cut & Serve:

    Let the treats and then use the oil overhand to lift the treats from the pan.

    Expert Tip:

    Low heat is essential. It allows the marshmallows to melt evenly and smoothly, ensuring that the mixture doen’t get too hot. If the marshmallow mixture cooks at a high heat, they will become hard and dry and instead of having the perfect gooey and soft texture. 

    Cooking Tips

    • For optimal results, always use fresh marshmallows. 
    • These treats can be stored at room temperature for up to two days in an airtight container. 
    • If you need to keep them longer, you can freeze them. Place them in layers separated by wax paper in an airtight container and freeze for up to six weeks. Allow them to sit at room temperature for 15 minutes before serving, although they may not be as soft since freezing can dry them out.
    • This recipe yields a generous 24 servings, making it perfect for potlucks, bake sales, and large gatherings. 
    • If you prefer fewer servings, simply halve the recipe and use an 8 or 9-inch square pan.

    Why are my Rice Krispie Treats so hard?

    Rice Krispies usually get hard due to high heat during the melting process of the butter and marshmallows. You might be tempted to turn up the heat in order to speed up the melting process, but DON’T RUSH THIS PROCESS. It will be well worth the few extra minutes to melt the butter and marshmallows over low heat. 

    How Long do Rice Krispies Treats Stay fresh?

    There is no need to refrigerate the treats. Just store them in an airtight container at room temperature. They will stay fresh for up to 2 days. Although they never last that long in my house!

    How do you harden Rice Krispie Treats?

    Are your treats too gooey? The quickest way to harden your Rice Krispie treats is to place them in the fridge and let them chill for about an hour. This will give them time to harden, allowing you to easily cut them into squares or designs with a cookie cutter.

    Ingredients
     
     

    • 6 Tablespoons salted butter or vegetable oil
    • 16 ounces mini marshmallows
    • 3 (7-ounce) jars of marshmallow creme or fluff
    • 1 teaspoon pure vanilla extract
    • 14 cups Rice Krispies cereal

    Instructions

    • Line a 13×9-inch baking pan with heavy-duty foil, leaving a foil overhang on all sides. Lightly spray foil with nonstick cooking spray.
    • Melt butter in a large pot or Dutch oven over low heat. Add marshmallows, stirring constantly, and cook until melted.
    • Remove pot from heat and stir in marshmallow creme and vanilla.
    • Gently stir in Rice Krispies with a rubber scraper until cereal is evenly coated.
    • Pour the mixture into the prepared pan and use wax paper to press it gently into the pan. Let the treats set for 1 hour.
    • Using the foil overhang, lift treats from the pan. Cut into 24 bars and serve.
