I’m so excited that Thanksgiving is right around the corner! Are you ready? I’m getting there. 🙂 Honestly, I am just excited that Halloween is over! Can I get an Amen? Throw away the candy and bring out the comfort food. Today I’m sharing a recipe for a fabulous side dish, my Broccoli and Cauliflower Casserole made with Ritz crackers! It is full of vegetables and cheesy goodness.
Now that we are entering party season, you know Thanksgiving, Holiday work parties, Christmas Eve and Day, New Year’s Eve, and more, it is time to start planning the dishes you will bring to said parties. When I am looking at a dish to bring to a party it needs to meet one major requirement. It needs to travel well so that it is still warm and looks good when I get to my destination. No one wants to eat something that does not look very appetizing! Am I right?
That is why this broccoli and cauliflower casserole is the best thing ever! It meets my party food requirements: it holds together well and it tastes so good. Make this for your next party and step aside to hear all the rave reviews from your friends and family once they taste it!
How TO MAKE Cheesy BROCCOLI CAULIFLOWER CASSEROLE AHEAD OF TIME:
- Time is at a premium when you’re prepping for your Thanksgiving feast. Save time by prepping this recipe the night before. Make the recipe up to baking except DO NOT add the cracker crumbs! Store the cracker crumbs separately, and keep the casserole covered in the refrigerator overnight. Bring the casserole to room temperature before topping with cracker crumbs and baking.

Can I use fresh broccoli instead of frozen?
Of course! When I use fresh broccoli in casseroles, I like to give it a quick blanch before adding it into the recipe.
Can you freeze broccoli casserole?
Yes! That’s one reason this broccoli and cauliflower casserole is so easy! Being able to put it in the freezer to use later is a major time saver. Just make sure you put it in a freezer-safe container and double wrap it with tin foil to help keep it fresh.
How long does broccoli casserole last in the fridge?
As long as you keep the broccoli and cauliflower casserole in an airtight container in your fridge it will stay fresh for 3-5 days.
COOK’S NOTE -Cheesy BROCCOLI CAULIFLOWER CASSEROLE:
- You can use either yellow or white extra-sharp cheddar cheese in this recipe, I used white.
- Please shred your own cheese, because the pre-shredded variety has starches and other agents added to it to prevent clumping. These additives aren’t the best when you’re making a cheese sauce!
- Use a high-quality cheddar for the best results. I personally love Kerrygold and Tillamook.

Broccoli Cauliflower Cheddar Casserole
Ingredients
- 1 sleeve of Saltine or RITZ Crackers crushed
- 8 ounces freshly grated extra-sharp cheddar cheese 2 cups
- 6 Tablespoons unsalted butter melted
- 2 large garlic cloves minced
- Salt & pepper
- 2 Tablespoons all-purpose flour
- 1 ¼ cups heavy cream
- ¾ cup low-sodium chicken broth
- 16 ounces frozen broccoli florets thawed
- 16 ounces frozen cauliflower florets thawed
- 2 teaspoons dried ground mustard
Instructions
- Adjust the oven rack to the middle position and preheat to 450 degrees F.
- In a medium bowl add the crushed crackers, 4 tablespoons of melted butter, 1/4 cup of shredded cheddar cheese, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Stir to combine and set aside.
- In a large dutch oven or heavy-bottomed pot, over medium heat add the remaining 2 tablespoons of butter, garlic, and flour. Stir constantly until golden and fragrant, about 1-2 minutes. Slowly whisk in the cream and broth. Stir in broccoli, cauliflower, dry mustard, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Bring to a boil and then reduce heat to medium-low and simmer covered, stirring occasionally, until broccoli and cauliflower are nearly tender, 5-8 minutes. Remove pot from heat and stir in remaining cheese until incorporated.
- Pour mixture into a 9×13-inch, or any other 3-quart baking dish and top with cracker crumbs. Bake for 10-15 minutes, or until crumbs are golden brown and crisp. Cool for 10 minutes before serving.

hate broccoli and cauliflower–would it work as well with other veggies (like canned peas, green beans, corn or carrots)??

Hi Wanda, I don’t see why this recipe wouldn’t work with canned veggies. I would just reduce the cooking time down a bit.

Suggestion would be using frozen vegetables or fresh. The canned are going to give you vegetables that are very mushy in this recipe and also high in sodium. You can use frozen peas, carrots, corn, green beans or even a good frozen mixed vegetables.

I usually substitute whole milk or 2% for cream in recipes. Since I drink skim milk, that’s creamy enough for me!

I am making this recipe for the first time tonight. I have high hopes for it! I would like to mention to you a change that I have to make. Being a type 2 diabetic, I am always looking for ways to lower the carbs in a recipe that I think my wife and I will like. The Ritz crackers would definitely not work for me. I often us pork rinds in place of bread crumbs so I thought I would try it in place of the Ritz. Not the same I know, and if I could go with the RITZ I would. Will let you know how it works.
