Cream cheese and red velvet were meant to be together! The brownies are moist, dense, and chewy. The cream cheese batter is swirled into the brownies creating a marbled effect that is rich in taste and super pretty.

These made-from-scratch brownies have a chewy and fudgy texture. They are an indulgent dessert perfect for Valentine’s Day or Christmas, with vibrant red and white colors throughout the brownies.

How To Make Red Velvet Brownies

  1. First, preheat the oven to 350 degrees F and line a square 8×8-inch baking pan with foil and coat it with butter. 
  2. Melt ½ cup of butter in a microwave-safe bowl and allow it to cool and then place it in a large mixing bowl. 
  3. Then, beat in the sugar, vanilla extract, cocoa powder, salt, food coloring, and vinegar until well combined. 
  4. In a small bowl, whisk together the eggs and then add them to the brownie mixture. 
  5. Slowly add the flour until it is combined. 
  6. Reserve ¼ cup of batter and pour the remaining batter into the prepared baking pan. 
  7. Next, make the cheesecake batter by beating the cream cheese and sugar together until fluffy in a medium bowl. 
  8. Then, add the egg and vanilla and continue beating until smooth. 
  9. Spread the cream cheese layer on top of the brownie batter and then spoon the remaining brownie batter using a tablespoon. 
  10. Use a knife, to swirl the cream cheese layer into the brownie batter, creating a swirl pattern. 
  11. Bake for twenty-five to thirty minutes or until a toothpick comes out clean and then remove from the oven and cool on a wire rack for ninety minutes. 
  12. Finally, cut and serve the brownies.

Recipe Variations

  • You can use low-fat cream cheese, but please don’t use fat-free cream cheese.

Storage Tips

SERVE: Because of the cream cheesecake layer, I recommend keeping these at room temperature for no longer than 2 hours before they ned to be refrigerated.

STORE: These will keep in an airtight container in the refrigerator for up to 4 days.

FREEZE: The red velvet brownies will keep in an airtight container in the freezer for up to 2 months.

THAW: Thaw overnight in the refrigerator.

Red Velvet is a classic flavor with a vanilla base and an addition of cocoa powder giving it a slight chocolate flavor. In my opinion, it is a proper mix of vanilla and chocolate, which is the best of both worlds. The batter is light red, often tinted to make it a more vibrant red.

Do brownies taste better with butter or oil?

Butter is always the answer! Butter is more flavorful than oil and is always my first choice, especially when making brownies.

Should you put brownies on the top or bottom in the oven?

The middle rack in the oven is the best place for brownies to make. The air can circulate evenly, so the tops and bottoms will not get overcooked too quickly.

Ingredients
 
 

BROWNIES:

  • ½ cup 1 stick unsalted butter, melted and cooled plus more for coating pan
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ cup unsweetened cocoa powder
  • teaspoon salt
  • 1 Tablespoon liquid red food coloring
  • 1 teaspoon distilled white vinegar
  • 2 large eggs room temperature
  • ¾ cup all-purpose flour

CREAM CHEESE LAYER:

  • 8 oz block cream cheese softened
  • ¼ cup granulated sugar
  • 1 large egg room temperature
  • ¼ teaspoon vanilla extract

Instructions

PREP OVEN AND PAN:

  • Move oven rack to the middle position and preheat oven to 350 degrees F.
  • Line a square 8×8-inch baking pan with foil, leaving extra on the sides to lift the brownies out, then coat with butter.

MAKE BROWNIE BATTER:

  • In a microwave-safe bowl or cup, heat ½ cup butter until melted, and allow to cool.
  • Add butter to a large mixing bowl.
  • Beat in sugar, vanilla extract, cocoa powder, salt, food coloring, and vinegar until well combined.
  • In a small bowl, whisk eggs.
  • Add eggs to the brownie mixture and stir until well combined.
  • Gradually add flour until just combined.
  • Reserve ¼ cup of batter and pour the remaining batter into the prepared baking pan.

MAKE CHEESECAKE BATTER:

  • In a medium bowl, beat cream cheese and sugar together until fluffy.
  • Add egg and vanilla and beat until smooth.

ASSEMBLE:

  • Spread the cream cheese layer on top of the brownie batter.
  • Spoon the remaining brownie batter using a tablespoon, do not spread.
  • Using a knife, swirl the cream cheese layer into the brownie batter, creating a swirl pattern.

BAKE AND COOL:

  • Bake for 25-30 minutes or until a toothpick comes out clean.
  • Remove from oven and cool on a wire rack for 90 minutes.

FINISH AND SERVE:

  • Cut and serve the brownies.
