Father’s Day is coming, it’s slowly but surely creeping upon us. What do you have planned for your dad/hubby/grandpa? Me? I’m not sure yet, but I know it will most definitely involve these Bacon Sticky Buns. For birthdays and holidays I like to come up with a special recipe and Father’s Day is no different.

The men in my family LOVE bacon and sticky buns so I thought why not combine the two for a knock-out recipe? And that’s how Bacon Sticky Buns were born.

Sticky Buns with Bacon and Caramel 

My motto is bacon makes everything better! That’s a fantastic life motto right? The sweet maple flavor in the sticky buns combined with the saltiness of the bacon is so good; you could even add some pecans for even more variety. 

If giving these for Father’s Day, you can make a card that says “THANKS for working your BUNS off to bring home the BACON.” Cute, right?!

These buns are made with delicious brioche dough. A strip of bacon is added to each bun before they’re rolled up. The buns are nestled into a caramel glaze, and then they’re baked. Finally, they’re turned out onto a cutting board and crispy bacon is added on top.

Now doesn’t that just sound so good? Good and very decadent–I suggest making these buns only once or twice a year, your arteries will thank me.

Cook’s Note:

For the bacon inside the buns, it needs to be cooked but still pliable. I achieved this by cooking the bacon on a microwavable tray for 4 minutes. Cooking times will vary depending on your microwave.

Equipment

  • stand mixer
  • mixing bowls
  • small saucepan
  • 9x13-inch pan
  • pizza stone
  • knife

Ingredients
 
 

For the Dough

  • 3 large eggs at room temperature
  • ¼ cup granulated sugar
  • ¾ cup buttermilk at room temperature
  • 1 ¼ teaspoons table salt
  • 2 ¼ teaspoons instant yeast
  • 4 ¼ cups unbleached all-purpose flour
  • 6 Tablespoons butter melted and cooled until just warm

For the Caramel Glaze

  • 6 Tablespoons butter
  • ¾ cup packed light brown sugar
  • 3 Tablespoons light corn syrup
  • 2 Tablespoons heavy cream
  • pinch table salt

For the Filling

  • 4 Tablespoons butter melted
  • ¾ cup packed light brown sugar
  • 2 ½ teaspoons ground cinnamon
  • pinch table salt
  • 12 slices bacon cooked until pliable but not crisp

For the Topping

  • 4 slices of bacon chopped and cooked until crispy

Instructions

MAKE THE DOUGH:

  • In the standing mixer bowl, whisk the eggs, buttermilk, sugar, salt, and yeast until combined.
    Mix the wet ingredients for the dough in a large bowl.
  • Add 2 cups of the flour and butter and stir until combined. Add 2 more cups of the flour and knead with the dough hook for 5 minutes on low speed. At the end of 5 minutes the dough should feel moist and soft but not wet and sticky. The dough should also clear the sides of the bowl. If needed, add the remaining ¼ cup of flour and knead 2-3 minutes longer.
    Add the flour to the mis and knead.
  • Place the dough onto a lightly floured counter and knead by hand about 1 minute. Lightly spray a large bowl with nonstick cooking spray and place the dough in the bowl and lightly spray the top of the dough with nonstick cooking spray. Cover bowl with plastic wrap let rise until doubled, about 2 – 2 ½ hours.
    Add the dough to a large greased bowl, cover with plastic, and let rise until doubled in size.

MAKE THE CARAMEL GLAZE:

  • Place all the ingredients in a small saucepan. Cook over medium heat, stirring occasionally, until the butter is melted and the mixture is combined.
    Cook the caramel glaze over the stovetop until thickened.
  • Pour and spread the glaze into the bottom of a nonstick metal 13x9-inch pan. Lightly spray the sides of the pan with nonstick cooking spray and set aside (it’ll be set aside for a couple of hours).
    Pour the caramel glaze into the bottom of a 9x13-inch pan.

MAKE THE FILLING:

  • In a small bowl add the butter, brown sugar, cinnamon, and salt and mix until combined; set aside.
    Mix together the sugar, cinnamon, and butter.

ASSEMBLE:

  • Place dough on a lightly floured surface. Using your fingertips gently shape the dough into a rectangle. Lightly flour the top of the dough and roll into a 16x12-inch rectangle.
    Roll the dough into a large rectangle.
  • Spread the filling evenly over the dough.
    Spread the sugar and butter mixture over the dough.
  • With the long edge of the dough facing you, cut the dough into 12 even slices.
    Cut the dough into 12 equal pieces.
  • Place a cooked strip of bacon in the middle of each dough strip and tightly roll dough into a bun.
    Place a piece of bacon onto each strip of dough and roll in buns.

SECOND RISE & PREP OVEN:

  • Place buns into prepared pan and cover with plastic wrap to rise until the buns are puffy and pressed against each other, about 1 ½ hour. While the buns rise place oven rack in the lower-middle position and place a pizza stone or inverted rimmed cookie sheet on the rack. Preheat oven to 350 degrees F.
    Add the sticky buns to the pan and rise until doubled in size.

BAKE & FINISH:

  • Place the buns in the oven atop the pizza store (or inverted rimmed cookie sheet if using) and bake until golden brown, about 25-30 minutes. Place on a wire rack to cool for 10 minutes. Then invert onto a large platter, cutting board, or inverted cookie sheet. Top with chopped, cooked bacon and serve warm.

  1. Can I form the buns, refrigerate and leave to cook in the morning?

    1. Yes, just leave then at room temperature to rise for about 30-60 minutes before baking!

  2. When do you add the caramel glaze? I don’t see it in the instructions to add to the sticky buns.

    1. Hi Missy, In the Directions under the heading “For the Caramel Glaze:” it explains how to make the glaze, and then the directions tell you to place the glaze in the 9×13 pan. You will then but rolled up the sticky buns and place them on top of the glaze in the pan to rise and then bake in the oven. It’s all there in the directions. I hope this helps! 🙂

      1. ok! I figured it out! I wasn’t realizing that the buns were placed on top of the glaze in the pan. Thanks so much! They are in the oven now….Father’s Day saying is printed…..waiting for my hubby to wake ip. Love this!
