No Churn Birthday Cake Ice Cream

This Birthday Cake Ice Cream recipe will make everyone happy! Young and old alike love it. And it is a no-churn recipe, so it is super easy to make. 

Now you don’t have to lick the bowl after making a cake; you can make this recipe instead and lick the ice cream! 

This recipe takes the classic flavor of Funfetti cake batter and turns it into a cool and creamy version. The cold texture of the rich, bold, buttery vanilla flavor is everything your ice cream dreams are made of. The sprinkles mixed in are like the cherry on top!

We have a lot of summer birthdays in my family and extended. From the end of June to the beginning of September, we have over 10 birthdays, including mine! So during the summer months, we get a little tired of birthday cake.

Crazy talk, I know. But, I came up with this recipe for my birthday to change things up a little. Plus, it’s so stinkin’ hot here still. I don’t want to turn on the oven if I don’t have to!

  • 3 cups heavy whipping cream – $3.51
  • ½ cup Funfetti cake mix – $0.30
  • 14 oz can sweetened condensed milk – $1.23
  • 1 Tablespoon butter – $0.10
  • 1 teaspoon pure vanilla extract – $0.31
  • 3 Tablespoons Funfetti Frosting + sprinkles – $0.15

This Funfetti Ice Cream is SO easy to make. Let me show you how!

Instructions

  1. Gather all of your ingredients for this Funfetti Birthday Cake Ice Cream recipe.
  2. Add 1 ½ cup of the cream, Funfetti mix, sweetened condensed milk, melted butter, and vanilla to a large mixing bowl. Whisk to combine.
  3. Add the sprinkles from the frosting mix, reserving a few for later. Stir to combine.
  4. Beat the remaining 1 cup of cream. Add it to the bowl and gently whisk in until combined.
  5. Add half of the ice cream mixture to your container. Top with 3-4 tablespoons of the frosting.
  6. Pour the remaining ice cream mixture on top. Mix the icing into the ice cream using a skewer. Move the skewer in a figure-eight pattern.
  7. Add the reserved sprinkle to the top. Freeze until firm, at least 6 hours.
  8. Scoop, serve, and celebrate!

Recipe Variations

  • You can switch up the cake mix to change the flavor. Some of my favorites are red velvet (make sure you change the frosting to cream cheese!), lemon, spice, and carrot.
  • I like to change up the icing color to match the party’s theme or the colors of the holiday.

Storage Tips

SERVE: You can keep the ice cream out at room temperature for about 30 minutes before it becomes too soupy.

STORE AND FREEZE: This Funfetti Ice Cream will keep in an air-tight container in the freezer for about 2 months, but I doubt it will last that long!
