How to make Cowboy Stew
- First, using a large pan, cook the hamburger meat, drain the grease, and then remove the meat.
- Next, cook the bacon in the pan and remove it once it is crisp. Then brown both sides of the sausage in the bacon grease.
- Add in the onions and saute them for about three minutes.
- Next, add the remaining ingredients into the pan, except for the cilantro. Simmer for thirty minutes.
- Finally, remove the stew from the heat and sprinkle with cilantro before serving.

Recipe Variations
- Serve these with cornbread or cornbread muffins.
- This also makes a great crock pot meal. First, Cook the meats according to the directions, then add everything to the crock pot. Cook on LOW for 8 hours or HIGH for 5 hours.
Storage Tips
SERVE: Serve with chopped fresh cilantro. You can keep the stew out for no more than two hours before it needs to be covered and refrigerated.
STORE: Store in an airtight container in the refrigerator for up to five days.
FREEZE: Once cooled, place the soup in a freezer-safe container or zipper top bag and freeze for up to three months.
DEFROST: Defrost at room temperature for 4-5 hours or overnight in the refrigerator.
REHEAT: Place the stew in a heavy-bottomed pot over medium heat and heat until warmed through.

Cowboy Stew
Ingredients
- 1 pound lean ground beef
- 6 slices bacon chopped
- 1 pound smoked rope sausage cut into 1-inch pieces
- 1 small yellow onion diced
- 1 Tablespoon minced garlic
- 2 10.5 ounces cans Rotel
- 2 15 ounces cans pinto beans
- 1 15 ounces can whole kernel corn with liquid
- 2 large Yukon gold potatoes peeled and cubed
- 2 cups beef broth
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- ½ teaspoon cumin
- ½ teaspoon black pepper
- Salt as needed
GARNISH:
- 2 Tablespoons cilantro chopped
Instructions
COOK MEATS:
- Cook the hamburger in a large pan and drain the grease. Remove the hamburger and cook the bacon in the pan.
- When the bacon is crisp, remove and brown both sides of the sausage in the bacon grease.
COOK ONIONS:
- Add the onions and saute for 3 minutes.
SIMMER SOUP:
- Add the remaining ingredients to the pan, except the cilantro.
- Simmer for 30 minutes. You can simmer longer for a thicker stew, use a potato masher, and mash some of the beans and potatoes to thicken the soup.
TO FINISH:
- When the stew is ready, remove it from the heat.
- Sprinkle with cilantro before serving.
