Making the dough ahead of time and freezing it might be a great option to free up some time instead of baking all your recipes in one day.

Should Christmas cookies be refrigerated?

Generally speaking, cookies are best when stored at room temperature in an airtight container. However, refer to each recipe specifically, as some cookies might be ok to refrigerate.
