I’ve got a confession to make. I do not love raw broccoli. I don’t like it and it is time that I admit it! Mostly, I can choke it down if it is dipped in ranch but other than that I just do not enjoy it. And one of my life goals is to always enjoy my food. 

So here is the dilemma. I know how good broccoli is for you so I want to eat it. But I don’t enjoy it raw. So what to do? Enter this roasted broccoli recipe

Oven-roasted broccoli is Ah-mazing. Like it definitely takes regular boring broccoli to the next level. It is tender on the inside and crispy on the edges with yummy seasonings sprinkled on each floret. 

It goes with almost any main dish and can be eaten year-round. Add it to the menu for your next meal and everyone will love you for it!

Is Roasted Broccoli healthy?

Broccoli is extremely healthy. Just like other green veggies, it is full of vitamins C, K, and A. Broccoli also has folate, calcium, and iron. That’s a lot of vitamins and minerals for one vegetable! To top it off, broccoli is low in calories and carbs yet high in fiber. So make sure to scoop a serving of this healthy deliciousness on your plate! 

How can I make broccoli taste better?

My first suggestion is to use my recipe for roasted broccoli to make your broccoli taste better. Obviously! But there are lots of additional ways to add flavor and variety to plain old broccoli. Here are a few of my favorites:

  1. Add some cheese and bacon bits
  2. Dip it in hummus
  3. Stir fry in sesame oil
  4. Cook it in onions, garlic, and butter

Does roasting broccoli remove nutrients?

Absolutely not! In reality, any type of cooking can destroy some of the vegetable’s nutrients but not enough to ruin it. Carry on with roasting your veggies, you will still get plenty of vitamins and nutrients when you eat them.  

How to Roast Broccoli: 

  1. First, preheat your oven to 425 degrees. 
  2. Next use your hands to toss the broccoli florets with olive oil, garlic, lemon zest, and salt and pepper until the florets are evenly coated. 
  3. Then layer the broccoli in a single layer on the baking sheet. 
  4. Finally, roast the broccoli in the oven for 15-20 minutes. Then sprinkle the broccoli with salt and pepper and parmesan cheese.

Ingredients
 
 

  • 1 ½ pounds about 1 large broccoli crown cut into florets
  • 3 Tablespoons olive oil
  • 2 large garlic cloves minced
  • 1 teaspoon lemon zest
  • salt and pepper
  • ¼ cup freshly grated Parmesan cheese plus more to taste (optional)

Instructions

  • Move oven rack to middle position and preheat to 425 degrees F.
  • On a baking sheet, use your hands to toss the broccoli florets with olive oil, minced garlic, lemon zest, and 1/4 teaspoon of salt and pepper until the florets are evenly coated.
    Place the broccoli on a baking sheet and mix with olive oil, lemon zest, and salt and pepper.
  • Arrange the broccoli florets so they are in a single layer on your baking sheet.
  • Roast the broccoli in the preheated oven for 15-20 minutes, or until broccoli is cooked through and beginning to brown on some of the edges (you can tell the broccoli is done when it is easily pierced with a fork).
  • Sprinkle the broccoli with salt and pepper to taste. Finally, sprinkle the Parmesan cheese over the florets and serve!
